Eggs Over Easy - with Sweet Potato Home Fries, Pan Seared Ham Steak and Cucumber Sprouts

Breakfast has always been my favorite meal of the day to eat...and truthfully, it is also my favorite meal to cook. Variations of this dish have become a staple on our table and luckily it is also one of Kelsey's favorites!

Natalie, one of Kelsey's old roommates was the first person to put cucumbers in an omelet for me (I think). And I feel in love. The fresh, light crisp of the cucumber is almost like fresh melon...and I love it with the runny yolk of an over easy egg.

Sweet potatoes are diced into 1/2" pieces and are first sauteed in a little olive oil with cinnamon and rosemary. After the potatoes are become soft, turn up the heat and sprinkle brown sugar on them. Allow them to sit for just a minute or two as the sugar begins to caramelize and you get that little crunch on the outside.

And of course some kind of small side of meat. The ham steak seemed to match well with the spring/summery feel the cucumber added to the dish (as opposed to a denser sausage).
